Breakfast Nachos

 

1/2 lb. ground beef or pork

1 pint cooked beans (pintos, kidney, anasazi, etc.)

1 medium onion, chopped

1 small can green chilies, chopped

3 medium flour tortillas - cut in 6 to 8 wedges

Salt to taste

Chili powder to taste

Ground cumin (cominos) to taste

Garlic powder to taste

Coarse grated cheese (you choose your favorite)

4 or 5 eggs

Fry and crumble the ground meat (add a small amount of oil if needed). Add onion when meat is just browned and continue to sauté'. When onions caramelize slightly, add beans. Keep enough water in the mixture to maintain a thick soup consistency. Add all seasonings and simmer. Spread tortilla wedges on a cookie sheet and bake at 400 degrees until crisp. Soft scramble the eggs and break them up into small lumps. Heap chips onto two plates. Drop meat and bean mixture liberally around on top of the chips. Place scrambled eggs somewhat centered on the pile of chips. Sprinkle grated cheese all over the plate.

In addition you may use your favorite salsa on this dish. Another thing to add more flavor is to spray the chips with PAM and then sprinkle chili powder (or any seasoning you prefer) on the chips before baking.

This dish is a little labor intensive but sure does get away from the same ol' thing for breakfast.
